Rack Up The Ribs

Feed a crowd with budget-busting pork ribs!

Chef Gus from Mr Nick’s at Frewville shares his foolproof recipe for melt-in-the mouth, tender, juicy pork ribs.

Serves: 4

Prep time: 15 mins

Cook time: 1.5 hours

Ingredients:

  • 1kg American-style pork ribs
  • 1 tblsp garlic powder
  • 1 tblsp onion powder
  • 1 teasp chilli powder
  • ½ teasp mustard powder
  • ½ teasp cumin
  • ½ teasp smoked paprika
  • ½ cup red wine
  • ½ cup water
  • Splash white vinegar (white vinegar tenderises the pork)
  • 100ml BBQ sauce (our stores have an extensive range of sauces)
  • 1 tblsp olive oil
  • Salt and pepper to taste

Method:

  1. Heat oven to 200°C.
  2. Mix spices, BBQ sauce, wine, salt and pepper and olive oil in a bowl. Make a wet paste. Add water if needed to achieve the paste consistency, then rub paste over the pork ribs.
  3. Add the water to the baking tray which helps keep ribs moist while cooking. Add ribs and cover with foil.
  4. Cook in oven for 1.5 hours until a deep mahogany colour. After that, remove foil and slather the pork with more BBQ sauce.
  5. Return to the oven for 5 mins. Then, remove from oven and rest for 10 minutes and serve!
