
INGREDIENTS: SERVES 8
5 peaches, mixed yellow and white (cut into wedges)
2 punnets cherry tomatoes (cut in half)
½ red onion (thinly sliced)
125ml extra virgin oil
60ml white balsamic vinegar
1 tbsp honey
Small Handful of chopped basil and dill
Instructions:
1. Combine the oil, vinegar, honey and herbs to make the vinaigrette.
2. Place peaches (*optional, grilled peaches), cherry tomatoes and sliced onion on a platter and drizzle with vinaigrette.
